Generalmente la raccolta avviene verso la fine di ottobre, le uve diraspate vengono fatte fermentare per circa 12gg con temperature inizialmente alte e successivamente più basse. La cuvée prende forma dopo le fermentazioni malolattiche e l’affinamento avviene in botti di media caratura per un minimo di sei mesi.
